Golden Portuguese-Style Cod Fish
Travel to the most Western point of Europe with this authentic Portuguese dish that will make you fall in love with Portugal’s most traditional fish, Cod.
Ingredients
- 500 g. Dried and Salted Cod Fish
- 4 table spoons of olive oil
- 500 g. potatoes
- 350 g. onions
- 5 eggs
- 2 garlic gloves
- 1 table spoon of shredded parsley
- Black olives
- 1 Tomato
- Salt and pepper
Preparation
- Soak the cod overnight in plenty of cold water with the skin up.
- On the next day, after removing the bones and skin from the cod, squash the pieces with the help of a cloth (wrap the pieces in a cloth and squash until the cod is in shreds).
- Peel the potatoes and cut them into very thin strips, wash in water several times, drain and dry.
- Peel and finely chop the garlic.
- Peel the onions and slice very thinly.
- Beat eggs and add salt and pepper to taste.
Cooking
- In a frying pan heat the olive oil and add the chopped garlic. When the garlic begins turning brown, add the potatoes and fry until they begin softening. Stip the potatoes frequently to avoid them sticking together. The potatoes must look more boiled than fried. Remove the potatoes and reserve.
- In the same olive oil add the onions and fry until transparent. Add the shredded bacalhau and stir with the onions. Let cook for five minutes. Add the fried potatoes, stir, and add the beaten eggs. Stir continuously at medium heat until the eggs are soft.
- Serve hot, garnished with shredded parsley, sliced tomato and black olives.
